- 6 sweet potatoes, baked in their skins
- 4 oz cream cheese
- 1 egg yolk
- 1 tsp chili powder
- 3 scallions, chopped
- salt and freshly ground black pepper to taste
- butter

- >From The Hot and Spicy Cookbook.

- These baked potatoes are excellent with pork chops or spareribs,
- turkey, or chicken. A green vegetable would be a good accompaniment.

- Mash the flesh from the sweet potatoes, reserving the
- skins. Add the remaining ingredients except the butter and stuff back
- into the skins. Dot with butter, sprinkle with extra chili powder,
- and quickly brown on a hot grill, or under a broiler. Serves 6.
